What each night’s sales took from the stock. Every dish sold draws its recipe’s ingredients out of the inventory; the Service Report shows it, one service day at a time.

The days
Open Product Reports → Service Report and pick a venue. You get every day of the last 90 days on which sales took something from the stock, newest first:
Date · Dishes — how many different dishes sold · Portions — how many were sold · Items used — how many stock items they drew on · Value — what those items were worth · Shortfalls — how many items ran short.
Only dishes linked to a recipe draw on the stock. A dish sold with no recipe link takes nothing, and does not appear here. See Menu.

Reading a shortfall
A shortfall does not mean the kitchen served something it did not have. It means the stock NexReps holds says it did not have it. The usual reasons: an invoice not entered yet, a count that was off, a recipe quantity that is wrong, or a product bought under another name.
The same item short night after night is the one to fix — at the invoice, the count or the recipe.
